And, there you have it, the sandwich was born.
In honor of the 4th Earl of Sandwich, I invite you to bite into one of my favorite sandwiches, the ALT. The ALT (for Avocado, Lettuce, and Tomato) is an excellent vegetarian substitute for the BLT. Check out this week’s post on why we all might want to eat more ALTs and fewer BLTs.
Avocados are an excellent source of MUFAs and generally well tolerated by people on low roughage/fiber diets.
For the record, November 3rd is also National Housewife Day.
And, Election day.
1 ripe avocado
4 slices of ripe tomato
4 leaves crisp lettuce
2 tbsp mayonnaise of choice or plain Greek yogurt
1 Chipotle chili in adobo sauce, minced
4 slices of bread (I used whole wheat spelt), lightly toasted
Salt and pepper
Combine mayonnaise/yogurt and chipotle chili in a small bowl. Spread mixture evenly on each slice of bread. Add 1 slice of lettuce to 2 pieces of toast and top with 2 slices of tomato. Arrange slices of avocado evenly on top of tomato, season with salt and pepper, add remaining lettuce, and top with 2 slices of toasted bread.
Makes 2 sandwiches.
