2 cups rolled oats
1/4 cup 100% maple syrup
1 tsp baking powder
1 tbsp ground cinnamon
1 tsp sea salt
2 cups organic milk or unsweetened nut milk
1 large egg
2 tbsp unsalted butter or coconut oil, melted and cooled slightly
2 tsp pure vanilla extract
2 ripe bananas, cut into 1/2-inch pieces
1 1/2 cups berries, or 1/2-1 cup dried fruit
Preheat the oven to 375°F with a rack in the top third of the oven. Generously grease the inside of an 8-inch square baking dish.
In a bowl, mix together the oats, baking powder, cinnamon, and salt. In another bowl, whisk together the maple syrup, milk, egg, butter or coconut oil, and vanilla.
Arrange the bananas in a single layer in the bottom of the prepared baking dish. Top with berries or dried fruit, followed by the oat mixture. Then, drizzle the milk mixture over the oats. Gently shake the baking dish to make sure the milk moves through the oats.
Bake for 40-45 minutes until the top is nicely golden and the oat mixture has set. Remove from the oven and let cool for 5-10 minutes. Cut into squares. Drizzle with maple syrup before serving, if desired.
